Warm Feta Quinoa Salad

Warm Feta Quinoa Salad 

Serves 4-5

White quinoa 180g
Lemons 2 tbsp
Garlic cloves 1 tsp
Ground black pepper 1.5 tbsp
Red peppers 175g
Red onion 2 tbsp
Cherry tomatoes 75g
Cucumber 2 tbsp
Feta cheese 300g



1. Preheat oven to 200ºC/400ºF/Gas 6.

2. Meanwhile, rinse quinoa in a fine mesh strainer until water runs clear, not cloudy. Cover quinoa with water in a small pot and bring to a boil. Turn heat down to low and simmer until the water is completely absorbed, about 10-15 minutes. When done, quinoa will be soft. Fluff with a fork.

3. In a small mixing bowl, combine lemon juice, garlic and ground pepper to make dressing.

4. Combine red peppers, red onions, tomatoes, and cucumber in a large mixing bowl.

5. Add dressing to vegetable mixture. Mix in cooled quinoa and parsley.
