Warm Feta Quinoa Salad

White quinoa | 180g |
Lemons | 2 tbsp |
Garlic cloves | 1 tsp |
Ground black pepper | 1.5 tbsp |
Red peppers | 175g |
Red onion | 2 tbsp |
Cherry tomatoes | 75g |
Cucumber | 2 tbsp |
Feta cheese | 300g |
Method:
1. Preheat oven to 200ºC/400ºF/Gas 6.
2. Meanwhile, rinse quinoa in a fine mesh strainer until water runs clear, not cloudy. Cover quinoa with water in a small pot and bring to a boil. Turn heat down to low and simmer until the water is completely absorbed, about 10-15 minutes. When done, quinoa will be soft. Fluff with a fork.
3. In a small mixing bowl, combine lemon juice, garlic and ground pepper to make dressing.
4. Combine red peppers, red onions, tomatoes, and cucumber in a large mixing bowl.
5. Add dressing to vegetable mixture. Mix in cooled quinoa and parsley.
