Moroccan Couscous with Vegetables

Margarine 30g
Large Spanish onions 60g
Carrots 1
Curry powder 2g
Vegetable stock base 50g
Raisins 60g
Chick peas in water 400g
Couscous 120g
Couregtte 1
Red peppers 1-2
Green peppers 1-2



1. Melt the margarine in saucepan over medium-high, heat and cook the onion, courgette, carrot and peppers, stirring occasionally.

2. Stir in curry powder and cook, stirring frequently.

3. Stir in stock, chickpeas, and raisins. Bring to a boil over a high heat.

4. Remove from heat and stir in couscous.

5. Cover and let stand 5 minutes.

6. Fluff with a fork.
