Bean Goulash with Rice and Beans

Serves 4-5

5 bean salad 480g
Sliced onions 200g
Frozen diced mixed peppers 200g
Margerine 15g
Tomato paste 30g
Boiling water 200ml
Ground Paprika 3 tbsp
Fresh flat parsley 20g
Natural yoghurt 50g
Whole green beans 400g
Wholegrain brown rice 300g
Ground black pepper to taste
Vegetable or beef stock cubes 1-2 

 

Method:

1. Colour the onions and peppers in the butter and season to taste with black pepper. Place in one large pan, together with the beans.

2. Pour in the tomato purée, stock and paprika, season and bring to the boil. Cook for between 1½ and 2 hours.
Garnish with natural yoghurt and the parsley.
