Bean Goulash with Rice and Beans

5 bean salad | 480g |
Sliced onions | 200g |
Frozen diced mixed peppers | 200g |
Margerine | 15g |
Tomato paste | 30g |
Boiling water | 200ml |
Ground Paprika | 3 tbsp |
Fresh flat parsley | 20g |
Natural yoghurt | 50g |
Whole green beans | 400g |
Wholegrain brown rice | 300g |
Ground black pepper | to taste |
Vegetable or beef stock cubes | 1-2 |
Method:
1. Colour the onions and peppers in the butter and season to taste with black pepper. Place in one large pan, together with the beans.
2. Pour in the tomato purée, stock and paprika, season and bring to the boil. Cook for between 1½ and 2 hours.
Garnish with natural yoghurt and the parsley.
